The Porrata presents a Tuscan style leek pie. Even if it looks similar to an open topped quiche, its consistence and taste are lighter. The dish may be served either as an appetizer or as a main course.
The filling for the pie consists of sauteed sliced leeks, chopped mortadella, prosciutto or ham mixed with eggs, salt and a big quantity of white pepper. The filling has to be refrigerated before introducing it to the tart. The porrata is baked in the oven for almost one hour.
The dish is usually served accompanied by a light salad, minestrone and a glass of white wine.
