Prawn salad is a very popular dish in Scotland, various regions having their own method of preparation. The simplest recipe of the dish includes freshly cooked and peeled prawns, some celery and a dressing made of lemon juice, mayonnaise or vinegar and some Old Bay seasoning (a mix including mustard, paprika, celery seed, bay leaf, both black and red pepper, cinnamon, cloves, allspice, nutmeg, cardamom, salt, mace and ginger). Other recipes may also call for the use of potatoes, onions, garlic, celery, spinach, avocado, peas, cucumber, thyme, lettuce, basil leaves, coriander leaves, peanuts, bread, fried bacon, and boiled eggs, thus enriching the texture and flavor of this dish.
