Rane in Guazzetto (Frog’s Legs in Tomato Sauce) is a Milanese dish popular all over Italy. It consists of frogs legs, as the main ingredient and also olive oil, garlic, onion, chopped celery stalks, tomatoes, flour, butter, parsley, croutons, salt and pepper.

Preparation

At first, a soffritto with olive oil, garlic, celery and onion is made; when the vegetables are almost ready the tomatoes are added and the whole mixture is cooked at low fire for a little time. The frogs’ legs are dusted in flour and gently fried in a separate skillet in crackling butter. The tomato sauce, seasoning and parsley are added last and the dish is ready to be served with a crouton.
