Ravioli Nudi, known also as Gnocchi gnudi or Naked ravioli, is one of the most delightful dishes originated in Tuscany. It is believed that the present kind of ravioli has ancient roots, a proof of this fact being a cookbook from 1300's, in which the dish is mentioned.
The gnocchi are made by combining ricotta and parmesan cheese, egg yolks, flour, butter, fresh spinach, cayenne pepper, salt and ground pepper. The sticky mixture is transformed by hands in small balls which are thrown in a pot of boiling salted water. When the ravioli float, they are removed from the pot with a slotted spoon and placed on the serving plate.
The dish is most delicious when served with grated parmesan cheese, melted butter, fried sage leaves and/or Béchamel sauce (made with flour, butter, milk, salt and pepper).
