Repollitos con Dulce de Leche
Repollitos con Dulce de Leche is a Guatemalan dessert, popular all over the country and in other Central America parts, mostly liked especially by children and by the greatest majority of sweets’ lovers. The ingredients used for making this sweet treat are: margarine, flour, eggs, milk, cornstarch, sugar, chocolate, condensed milk and sprouts. Preparation is not an easy one because it requires some time and effort, but the result is worth trying to make one’s own Repollitos. Water is heated and margarine is placed into it to melt, later adding flour and simmering all this at a low fire until the mass is thick; eggs are whisked into the mixture and the resulted batter is poured in oil or butter greased forms and baked in the oven. The filling cream is prepared from condensed milk, cinnamon, whole milk, cornstarch, egg yolks, sugar and margarine, all being also boiled at low fire until thickens. The “muffins” are filled with milky cream and sprouts, and are traditionally sprinkled with confectioner’s sugar, condensed milk or chocolate sauces as topping. The dessert is usually complemented with a good cup of Guatemalan original coffee, tea or any other non-alcoholic beverages.
