Riso e Prezzemolo (rice soup with parsley) is a traditional dish in Milan and its suburbs which is rather easy to prepare and has rice and parsley as the main ingredients. The variety of ingredients added to this dish gives one a chance to improve the taste, aspect and flavor of the soup. Classically, the main components are: rice (either white or brown), butter or margarine, olive oil, onion, garlic, salt and pepper, and, some newer ads like dry white wine, crumbled crisp bacon, meat of different animals, mushrooms, chicken broth, Parmesan cheese. There are varieties of this soup made with fish, especially salmon fish. It is served steaming hot as a part of the main course, in a soup bowl with crispy, fresh bread and sprinkled with a handful of parsley.
