Riso e Rape

Riso e rape is a thick Milanese soup usually containing rice, turnip, prosciutto (bacon) and freshly-grated Parmesan cheese as the basic ingredients. Preparation is simple and easy as the turnip is peeled and cut into thin slices and boiled in meat or vegetable broth together with rice, parsley and a clove of garlic. Seasoning is added to taste, salt and pepper and a good dusting of Parmesan on the top. Another recipe of this soup, peculiar to Lombardy region of Milan, is when turnip, parsley and rice are first simmered and then mixed with prosciutto cut into thin pieces and grated cheese. The combination of sweet taste of turnips and meaty-salty taste of broth is perfectly acquired by this dish and offered to the visitors of the region.
