Risotto alla Toscana
Risotto Alla Toscana is a traditional dish, specific to the Italian cuisine. Due to its nutritional value, it fits perfectly for a cold winter lunch.
Beside the short grain rice, the recipe of the dish includes numerous ingredients such as meat stock, red wine (preferably Chianti), chopped mushrooms, red onions, garlic cloves, celery stalks, carrots, tomato paste as well as meat products (usually sliced chiken kidneys and livers, minced meat and crumbled Italian sausages). The aroma and taste of the dish may be enriched with chili and cinnamon powder, nutmeg and ground pepper.
The rice is added when the rest of the ingredients are already simmered and have a pleasant golden colour.
When risoto is ready, it is stirred with grated Parmesan cheese and butter, garnished with chopped parsley or mint leaves and served accompanied by a light salad.
