Roast saddle of lamb

The main ingredient of this dish is the saddle of lamb and sometimes the lamb kidneys too. The saddle of lamb is seasoned with salt, paper, rosemary and sometimes with garlic and olive oil too and baked in an oven. Traditionally, the roast saddle of lamb is served with a sauce. The ingredient for this sauce can be different. It can be a simple sauce made of some fat, plain flour, beef stock, redcurrant jelly, sherry, salt and pepper. But it can also be a more complicated sauce made also with some kidneys from the lamb, shallots, onions, carrots, leek, garlic, tomato purée, rosemary, bay leaf and red wine. The roast saddle of lamb can be served alone or with some side vegetables like celery, potatoes or Brussels sprouts.
