Roasted Sweet Potato (烤红薯*, kǎohóngshǔ)

During cold winter months, vendors on the street corners of Xian sell a roasted sweet potato. Grown in the countryside, these sweet potatoes are brought into the city fresh and then roasted over coal or a fire until they are fully cooked. Stacked on top of a wheeled, round wooden barrel, the red or white sweet potatoes are weighed and sold by the kilogram. After buying a sweet potato, carefully peel the skin off the top and savour the sweetness!
