Rollbraten is a roasted meat dish which is rather popular throughout the country and can be found in all supermarkets, street stalls, restaurants and snack bars in Munich. It is mainly a piece of pork or veal meat which is filled with different stuffing, rolled and roasted until becomes brown of color. Typically, pork shoulders are used, but in principle, other parts of meat are also good for this dish.
Depending on the recipe, the meat is coated with marinade before rolling, and filled with minced meat or onions, then it is either tied with twine or wrapped in a synthetic fiber network which are removed before eating the roast meats, as these are inedible parts. An alternative in preparation is to use pigs caul or skin to keep the roll firm; this is edible after cooking, and protects the crust against damage.
