Rongi in translation from Punjabi means black eyed beans. A curry made from this kind of beans is very popular all over India due to its easy method of preparation and nutricious effects. The pre-soaked rongi are pressure cooked with chopped onions, pureed tomatoes, grated ginger, garlic, cayenne pepper, black pepper, cardamom, cumin, coriander, fenugreek, cinnamon and mango powder. The dish is garnished with chopped serrano or cilantro leaves and served either with parathi or roti flatbreads or with rice.
