Saffron Risotto is a common dish in the Italian speaking canton of Switzerland, Ticino and is quite popular with the Swiss and those coming to visit Zurich in particular. It is a light dish, basically made from Arborio rice, medium-grain rice from Italy, and other ingredients like: onion, vegetable stock, white wine, olive oil, saffron soaked in warm milk, grated cheese, salt and pepper.
Onions are fried in a saucepan with oil until they become transparent, then rice is poured in and fried for a while. Then wine and a ladle of vegetable stock are added and are poured in gradually, until the rice is totally cooked. Saffron, salt and pepper are sprinkled to season the rice, then grated cheese is added last on top of all.
The dish can be served alone, with stewed vegetables on the top, seafood or with meat of any origin and preparation. This is a rather filling main course with a particular saffron flavor and delicious taste.
