Salade liegeoise is very popular in Liege (a region in Belgium). It is made of potatoes that are previously boiled sometimes peeled and sometimes unpeeled, green beans that also previously are cooked and bacon or pork belly. At the end all ingredients of the salad are mixed and cooked in some butter together with some onions, shallot, white wine or vinegar, salt and pepper. Before serving to the Salade liegeoise is added fresh parsley. The salad is served hot as well as cold, as a main course or as a side dish as well.
