Schiacciata alla fiorentina cake

Schiacciata alla Fiorentina is a festive cake, baked traditionally for Carnevale and Easter period. The recipe of the dessert has ancient roots.

The cake is made of all purpose flour, sugar, eggs, corn, olive or sunflower oil, milk, vanilla, cocoa, orange juice and zest and baking powder. The mixed ingredients are poured in a cake pan and baked in the oven for about half an hour.

The ready schiacciata is sprinkled with powdered sugar. Most of the local bakers decorate the top of the cake with the fleur-de-lis symbol made of cocoa powder.

If desired, the cake may be filled with whipped cream or any other pastry cream.
