Singaporean noodles are used not only for hot dishes preparation, but for salads as well. The classical Singaporean noodle salad includes spaghetti-style noodles, sesame seeds, chopped garlic, chives, sherry and chilli sauce as the main ingredients. In the first stage of the preparation sesame seeds are toasted for a minute till brown and fragrant, and noodles are boiled in salted water till tender. Then broccoli and asparagus are boiled and chilled apart. The stock is boiled on moderate heat together with peanut butter, some soy sauce, sherry, vinegar, little sugar, chilli sauce, vegetable oil, scallions, ginger, chopped garlic and sesame seeds added gradually. Finally, the dish is served in a large bowl, topped with dressing and garnished with red pepper, mushrooms and chives.
