Soft fried tenderloin (软炸里脊)
Soft fried tenderloin (软炸里脊) is made of sliced pork tenderloin being first soaked in a mixture of rice wine and salt, then wrapped into a paste made of egg white and flour before it is lightly fried in cooking oil. The cooked tenderloin is very tender and sesame oil is added when it is served.
