Solomillo, grilled sirloin (the meat taken from the lower part of the cow's ribs), steak is a delicious main dish oftenly served in the restaurants of Asturias. Before grilling, the meat is marinated for at least three hours in a combination of soy sauce, wine or cider vinegar, olive or any other vegetal oil, cayenne powder, minced garlic, ground ginger, honey, thyme and black pepper. The condiments may differ from receipt to receipt. The sirloin is grilled on both sides without piercing until it obtains the perfect colour and tenderness. Before serving, the meat is sprinkled with sea salt and decorated with green parsley.
