Souse (sowse) is an authentic soup unique to Bahamas and Caribbean cuisines. The soup is simply made from water, fresh lime juice, green peppers, carrot, potatoes, onions, celery and meat, that adds to the soup a unique and delicious flavor. The meat that is usually added to the souse is oxtail, chicken, sheep’s tongue, pigs’ feet, head, ears or tail. Common seasonings include Bahamian red pepper, black pepper, salt and garlic. Conch, fish or beef souses are popular variations of the souse. Delicious, aromatic and a bit piquant souse is served hot.
