Spit-roasted pork loin
Spit-roasted pork loin is a very popular dish in Chicago. This dish refers to the pork loin which is a cut of meat from a pig, created from the tissue along the top of the rib cage, which is roasted on a spit. This dish is very popular all over the United States. The method of roasting the pork loin is similar to roasting a pig on the spit. Before being roasted, the pork loin is covered with a mixture made from different spices, garlic and salt, after what the meat is refrigerated overnight. It takes several hours for the pork meat to get roasted, thus becoming tender and more flavorful. The meat is usually sliced and served with vegetables. The spit-roasted pork loin can be also served cold, mainly as a filling for various sandwiches.
