Spring Rolls (Chun Juan, 春卷)

In the past, spring rolls were closely associated with the Chinese New Year, also known as Spring Festival, hence the name. The traditional spring roll is made by wrapping fresh vegetables in a thin pan-cake and deep frying in cooking oil, so it is crispy and has a crunchy texture. Spring rolls are served with dipping sauces like sweet plum sauce or soy sauce.

Today the spring roll is a common dish served all year round and can be found in many restaurants in China.
