Steamed Sophorica (槐花饭*, huáihuāfàn)

In Spring, particularly late April through May, Xian offers a dish that is quite unique – Steamed Sophorica. Sophorica blooms briefly in these spring months, so it is then that sophorical petals are washed and then mixed with special salts and flour. Once these ingredients are tossed together, the coated petals are steamed and served for everyone's enjoyment. Since Steamed Sophorica comes from a tree's petals, one would think this dish is sweet, however, thanks to the use of salt, prepare yourself for salty goodness!
