Tuscan Strisce e Ceci

Strisce e Ceci (noodles with chickpeas) is a vegetarian dish belonging to the Tuscan cooking culture.

The chickpeas have to be soaked overnight before starting cooking the dish. Half of them is simmered together with garlic cloves, green celery stalks or rosemary and diced ripe tomatoes. The rest chickpeas are boiled and mashed, and then added to the simmered ingredients.

The one centimeter wide homemade noodles are cooked and stirred with the rest of the ingredients.

The Strisce e Ceci is seasoned with salt an pepper, sprinkled with grated parmesan cheese and served hot.
