Su böreği, literally translated as Water Borek or sometimes called “Turkish lasagna”, is a delicious dish originating from the time of the Ottoman Empire, in the Anatolian provinces. It is prepared from layers of dough boiled briefly in large pans, then a mixture of crumbled feta cheese, chopped parsley and olive oil is scattered between the layers. The whole thing is brushed with melted butter and beaten egg yolks, and laid in a masonry oven to cook. The modern recipes of the filling for Su böreği may vary, it may include meat or spinach.
