Supa de Scigol (Zuppa di cipolle) similar to French onion soup is one of the most popular soups in Milan. Common ingredients usually include Taleggio cheese from east of Lake Como, onions, unsalted butter, beef broth, salt and pepper. The Taleggio cheese can be substituted by firm Brie cheese which is practically of the same structure, taste and color. This soup is served with slices of toasted or old bread arranged in two layers in a soup pot; the topping serves a handful of freshly-grated Parmigiano. The amazing Supa de Scigol which must be tried by all soup lovers is just perfect on a cold winter day or as a lunchtime snack with crispy bread.
