Suquet is a fish stew, very popular in the Catalan cuisine.

Suquet is the diminutive form of juice ("suc" in Catalan), fact that implies the idea of a juicy seafood dish. Though there are many recipes for this dish, the basic ingredients remain to be the firm-fleshed fish and shellfish pieces, as well as such vegetables as tomatoes, onions, potatoes and green peppers. Saffron and almonds constitute the undeniable Catalan touch, as they increase the flavor of the dish.

Various cooks use various fish and shellfish for the preparation of suquet, as well as various quantities of liquid. For this reason, some people tend to call this dish a stew, while others claim it to be a soup.

This delicious seafood casserole is usually served immediately after preparation.
