Tavë kosi is a national dish in Albania, that is most often served as a main course.
Though easy in preparation, this dish is very tasty. It is a simple dish of baked lamb and rice, served with a yogurt sauce.
The secret of the squishy meat of Tavë kosi consists in the fact that the lamb is baked apart from the rest of the ingredients until it turns brown.
The rice is added to the lamb and yogurt sauce is poured on top. The dish is then left to bake. Due to the eggs in the sauce, the consistency of the Tavë kosi becomes thick, it resembling a quiche.
Tavë kosi is served hot, usually accompanied by an Albanian Tomato Cucumber Salad.
