Testi kebabı, "earthenware-jug kebab" is a delicious Anatolian specialty very popular in Turkey and the Mid-Western Black Sea region. Testi kebab usually consists of meat (beef, lamb or chicken) and such vegetables as carrots, tomatoes, eggplants, beans, shallots, garlic, butter and green pepper. Meat and vegetables are traditionally cooked in testi (a special clay pot or jug) over fire. When the dish is cooked, the top of the jug is removed and the aromatic meal is ready to eat.
