Tjvjik (տժվժիկ, tžvžik)
Tjvjik (Armenian: տժվժիկ tžvžik) is a dish of fried liver and kidneys with onions. Traditionally it was made with beef liver, but nowadays any liver can be used to prepare tjvjik, also plums, heart and kidneys may be added optionally.
It is simple to prepare this dish. First the onion is fried, then different herbs are added and finally the pieces of liver are added to the pan and fried till ready. Grated tomatoes or tomato paste and fresh or frozen vegetables are often added while making tjvjik.
