Tlačenka (brawn with onion) is a traditional Czech dish similar to Polish salceson. It is a kind of sausage or slice of brawn-like meat pudding. All recipes are quite similar: made with pork or chicken meat, liver and various offal, mixed with onions, salt, spices, stock and traditionally poured into a prepared pig intestine. It is usually left to solidify and then refrigerated. The dish is commonly served at room temperature with chopped onions, horseradish and sprinkled with vinegar (which gives an acidic taste).
