Tortitas de calabaza (pumpkin fritters) is a typical Spanish dish that represents very simple but enjoyable dessert or snack. It has the similar recipe and cooking method to all other kinds of fritters. There are common ingredients like flour, sugar, eggs, salt, and usually precooked, fine cut pumpkin. To enrich the flavor of tortitas de calabaza aromatic ingredients such as ground cinnamon, cinnamon sugar, anise grains, lemon, citrus zest or vanilla extract are used. Traditionally round-shaped tortilas are pan fried until golden brown. Pumpkin fritters are toothsome. It’s nice when they are served warm.
