Triglie alla livornese
Triglie alla livornese, or Livornese mullets, is a traditional Italian dish specific to the port city of Livorno. The meal can be cooked using either white or red mullets. The process begins by simmering chopped garlic cloves, celery stalks, parsley and riped tomatoes in extra virgin olive oil. When the products obtain a tender consistency, the previously cleaned mullets are introduced into the frying pan. The same dish may be cooked in a casserole. When ready, the trigli alla livornese are garnished with chopped parsley leaves and served hot.
