Uova Frittellate o Affrittellate with fried bacon and crunchy bread


Uova Frittellate o Affrittellate are Italian style fried eggs.

The fresh eggs are breaked gently (in order not to damage the yolks) directly in the frying pan with hot extra virgin olive oil. For better results, the dish is cooked on a very slow fire. When the whites obtain an opaque colour, the eggs are seasoned with salt and black pepper and sered with slices of crusty bread (preferably Florentine bread).

Traditionally the Uova Frittellate o Affrittellate are served with mashed potatoes and spinach with butter, or fried bacon.
