Tuscany is famous for its beef dishes and the Valigette is one of the most delicious and attractive looking representatives of the local cuisine.
The thinly cut beef steaks (Silverside steaks) are covered with slices of ham, Fontina cheese, artichoke hearts and parsley leaves. The nicely arranged ingredients are rolled into accurate roulades and fixed with toothpicks or kitchen string. The rolls are cooked together with already simmered carrots, artichoke leaves and a glass of white wine.
When the dish is ready, the string or the toothpicks are removed and the delicious Valigette is served hot with mashed potatoes.
