Weihnachtsgans, literally translated as Christmas Goose, is a special dish prepared by the Germans at Christmas or any other holiday like birthdays, family reunions, etc. Sometimes, the goose is substituted by a duck, due to the fact that locals do not cook and eat turkey very often. The ingredients used to cook this Weihnachtsgans are: a goose, apples, onion, thyme, salt, pepper, flour and chicken broth or stock.
The goose is washed, dried and seasoned with salt, pepper and thyme on all sides; apples and onions are cut into quarters and placed inside the bird. Some water is mixed with salt and poured on the baking tray; the goose is arranged on the roasting rack and cooked in the oven, being periodically basted with the salted water. A sauce containing chicken broth, goose fat, flour, thyme, pepper and salt is then made and poured gently over the goose meat. Christmas Goose is served with potatoes, cooked apples and onions, Brussel sprouts or any other available side dish.
