Wiener Backhendl

Wiener Backhendl is the traditional Austrian breaded chicken meat. This kind of dish requires a little effort, as the way of its preparation is not an easy one. Amongst the common ingredients one may find: whole chicken, lemon juice, paprika, flour, eggs, vegetable oil, bread crumbs, butter and parsley. The chicken is first cut into serving pieces, marinated in lemon juice and spices and then covered with flour; in a bowl eggs are beaten together with water and oil. Afterwards chicken slices are dipped in the egg mixture and let for about 15 minutes before frying. Finally they are baked in hot fat until lightly browned and crusty. Wiener Backhendl is served hot and usually garnished with vegetable salads of French fries.
