Wild mushroom soup

Wild mushroom soup is a comforting and light soup. It is usually made creamy in texture. To prepare this soup, first leeks are sautéed in butter, then cut mushrooms are added. It is seasoned with freshly ground pepper and fried a little. A little of wine, vegetable or meat broth is poured into the mushrooms. It is cooked till ready and mashed. Some cream is added at the end.

Wild mushroom soup is decorated with thyme, parsley and is ready to be served hot. Sour cream may be added to the plate with the soup.
