Zelnacka is a traditional Czech soup with cabbage as the primary ingredient. Its main characteristic is its sharp biting taste, which usually originates from cabbage. The dish is quite easy to cook: it can be prepared with or without different types of meat (usually for vegetarians). The major ingredients of zelnacka are pickled cabbage, meat (beef, pork, lamb, sausage, bacon), supplemented with diced potatoes, tomatoes, flour and chopped onions, but may also contain carrots and mushrooms. The spice mixture is enriched with caraway, salt, bay leaf and sweet paprika. The soup is traditionally eaten hot with rye bread and thickened with sour cream.
