Zerde is a Turkish dessert, a sort of sweet pudding from rice and colored yellow with saffron. It is a festive dish popular at weddings, birth celebrations and during the first ten days of Muharram. A classical Zerde includes the following ingredients: rice, water, saffron, currant, hazelnuts, starch, sugar and rose water. The preparation begins with cooking rice until tender. Then starch is dissolved in cold water and blended into rice. Saffron is boiled with a little water in a saucepan, and then added to rice together with sugar, stirring well. When sugar is dissolved and the rice got yellow colour, given by saffron, the pot is removed, and rose water is stirred in. The dessert is poured into deep serving bowls, chilled and garnished with crushed hazelnuts, currants and pomegranates seeds.
