Zuppa di cipolle
The Zuppa di cipolle is a variation of the French Onion Soup, some ingredients being replaced with other, more specific to Italy. The receipt of the dish requires yellow or brown onions, garlic cloves, diced tomatoes or tomato paste, chicken or vegetable broth, flour, white wine, chopped Italian parsley and salt. Sometimes, when lacking onions, leek whites are as appropriate. Before serving, one or two slices of toasted bread (or croutons) are introduced directly in the bowl of soup and the dish is generously sprinkled with grated Parmesan or Pecorino cheese.
