Hong am Rèisleck

Hong am Rèisleck is a traditional dish which represents chicken in white wine, widely consumed throughout Luxembourg. Similar to the French Coq au Riesling, it is hearty and delicious meal, because it contains such ingredients as shallots, garlic, parsley, butter, cream, meat stock, egg yolk, flour, mushrooms and oil. The quartered chicken is slightly browned, then chopped parsley, shallots, garlic are added and cooked on a low heat. Afterwards stock and wine are poured over. Thirty minutes later chopped and fried mushrooms are added, and just before the dish is ready, the sauce made of flour, egg yolk and cream is poured into the pan. Hong am Rèisleck is served immediately alongside dumplings or noodles.
