Italian Pasta Salad

Vegetable pasta salad is a perfect side dish both in summer and winter and is widely popular with the locals and tourists. It is considered to be rather high in calories and accordingly a nutritious and tasty comfort food. The ingredients for the salad are: pasta ( penne or fusilli), zucchini, tomatoes, pepper, feta cheese (optionally), eggplant, asparagus, olive oil or mayonnaise, balsamic vinegar, salt and black pepper, cilantro or basil. The choice of vegetables for this depends on one’s own wish and taste, as the restaurants offer a good variety of pasta vegetable salads.

Preparation

The vegetables are cut into smaller pieces and either roasted, grilled or poached ( in a bouillon of pasta); pasta is boiled and then mixed with the vegetables, seasoned with salt, pepper and either mustard, olive oil and vinegar or mayonnaise and mustard sauces. The salad is served in bowls or plates, garnished with chopped fresh basil or cilantro, which are sprinkled on top together with feta cheese (which can be omitted if wanted). The dish is rather common, but the assortment of ingredients make it full of colors, tastes and flavors.
