Knoblauchcremesuppe, the garlic cream soup is one of the most famous dishes in Austria that is why they say that there are a hundred recipes to cook it. The most frequently cooked contain garlic, onions, milk (or cream) and vegetable stock in its base. Sometimes the vinegar can be added. The garlic is cut into small pieces; onion is chopped very fine, after which are mixed with the butter. Then the stock and the milk are added and the flour is poured gradually. The soup is boiled and stirred constantly about 10 min. Finally the bread is cut in pieces and fried in a bit of oil. Usually croutons can be used instead of the bread. The soup is always served with parsley and the piece of butter, that will greatly improve the taste.
